Instructions
In a large bowl, combine the rolled oats, shredded coconut, and vanilla protein powder. Mix thoroughly to ensure even distribution.
Add the almond or cashew butter, maple syrup (or honey), lemon zest, and fresh lemon juice to the dry mixture. Stir well until everything is fully combined and sticky enough to hold together.
