Ingredients

Dry Ingredients

  • 1 cup Rolled Oats
  • 1 cup Shredded Unsweetened Coconut
  • 1 scoop Vanilla Protein Powder

Wet Ingredients

  • 2 tablespoons Almond Butter or Cashew Butter
  • 2 tablespoons Maple Syrup or Honey
  • 1 unit Zest of 1 Lemon
  • 2 tablespoons Fresh Lemon Juice

Instructions

  • In a large bowl, combine the rolled oats, shredded coconut, and vanilla protein powder. Mix thoroughly to ensure even distribution.
  • Add the almond or cashew butter, maple syrup (or honey), lemon zest, and fresh lemon juice to the dry mixture. Stir well until everything is fully combined and sticky enough to hold together.
  • Using your hands, roll the mixture into small bite-sized balls (about 1 inch in diameter). If the mixture is too sticky, dampen your hands slightly with water to make rolling easier.
  • Place the formed balls on a plate or tray and refrigerate for at least 30 minutes. This will help them firm up and hold their shape.
  • Enjoy immediately as a healthy snack or store in an airtight container.
