  • 1 lb Sausage kielbasa, cut into 1/4-inch pieces, then quartered
  • 3 large Potatoes, peeled and diced into 1/2-inch cubes
  • 1 cup Diced onions
  • 2 cloves Garlic, minced
  • 1 tsp Slap Ya Mama® seasoning
  • 1 tsp Pepper
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 10.5 oz Cheddar cheese soup (half a can)
  • 1 cup Sharp cheddar cheese
  • 1/2 cup Water (may need more, use 1/8 cup at a time)

Instructions

  • Preheat oven to 350°F and lightly spray a 13 x 9 baking dish or a 3-quart baking dish with non-stick cooking spray. Set aside.
  • In a Dutch oven or large stock pot, add cut sausages with about 1/2 cup of water, adding 1/8 cup more as needed while browning.
  • Cook over medium heat until the water evaporates and sausage is browned. Then add diced onions and cook for 3-4 minutes before adding garlic.
  • Once onions are translucent, add diced potatoes to the pot.
  • Pour in chicken broth, heavy cream, 1/2 can of cheddar cheese soup, seasoning, and pepper. Stir to combine.
  • Cook over low heat just until the mixture starts to boil.
  • Turn off heat and stir in cheddar cheese.
  • Transfer mixture to the prepared baking dish and top with additional cheese if desired.
  • Cover with foil and bake for 65-75 minutes, until potatoes are tender.
  • Remove foil and bake uncovered for an additional 10 minutes.
  • Carefully remove from the oven and serve warm.

Notes

For extra flavor, add bell peppers or broccoli to the casserole. Try swapping kielbasa for turkey or chicken sausage for a lighter version.
