1lbSausage kielbasa, cut into 1/4-inch pieces, then quartered
3largePotatoes, peeled and diced into 1/2-inch cubes
1cupDiced onions
2clovesGarlic, minced
1tspSlap Ya Mama® seasoning
1tspPepper
1cupChicken broth
1cupHeavy cream
10.5ozCheddar cheese soup (half a can)
1cupSharp cheddar cheese
1/2cupWater (may need more, use 1/8 cup at a time)
Instructions
Preheat oven to 350°F and lightly spray a 13 x 9 baking dish or a 3-quart baking dish with non-stick cooking spray. Set aside.
In a Dutch oven or large stock pot, add cut sausages with about 1/2 cup of water, adding 1/8 cup more as needed while browning.
Cook over medium heat until the water evaporates and sausage is browned. Then add diced onions and cook for 3-4 minutes before adding garlic.
Once onions are translucent, add diced potatoes to the pot.
Pour in chicken broth, heavy cream, 1/2 can of cheddar cheese soup, seasoning, and pepper. Stir to combine.
Cook over low heat just until the mixture starts to boil.
Turn off heat and stir in cheddar cheese.
Transfer mixture to the prepared baking dish and top with additional cheese if desired.
Cover with foil and bake for 65-75 minutes, until potatoes are tender.
Remove foil and bake uncovered for an additional 10 minutes.
Carefully remove from the oven and serve warm.
Notes
For extra flavor, add bell peppers or broccoli to the casserole. Try swapping kielbasa for turkey or chicken sausage for a lighter version.
