Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
In a bowl, whisk together flour, baking powder, and salt.
In another large bowl, cream butter and sugar until fluffy and pale.
Beat in eggs one at a time. Stir in lime zest and lime juice.
Alternately add the flour mixture and milk, beginning and ending with the flour mixture. Mix until just combined.
Divide batter evenly between the pans. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool cakes completely on wire racks.
To make the frosting: Beat butter until creamy. Gradually add powdered sugar, lime juice, lime zest, and milk. Beat until smooth.
Frost cooled cakes and garnish with extra lime zest if desired. Chill slightly before serving.
Notes
For extra zing, increase lime juice in the frosting. Store leftovers in the fridge for up to 5 days or freeze the cake (unfrosted or frosted) for up to 1 month.
