Instructions
Preheat your oven to 400°F (200°C).
In a microwave-safe bowl, combine the cream cheese and mozzarella cheese. Microwave on HIGH for 1 minute, then stir until the mixture is smooth.
To the melted cheese mixture, add baking powder, eggs, Ranch mix, and almond flour. Stir well until all ingredients are thoroughly combined.
Fold in the shredded cheddar cheese and chopped cooked bacon. Mix until distributed evenly.
Spray a 10-inch iron skillet with cooking spray to prevent sticking.
Divide the dough into 11 or 12 equal portions and shape them into balls. Place them evenly in the prepared skillet.
Transfer the skillet to the refrigerator and chill for 10 minutes—this helps the dough set and prevents the biscuits from spreading too much while baking.
Remove the skillet from the refrigerator and bake in the preheated oven for 20 to 25 minutes, until the biscuits are golden brown and cooked through.
Remove from the oven. For an extra touch, brush the warm biscuits with melted butter and sprinkle with dried parsley, if desired.
