Instructions
Pat the steak cubes dry with paper towels. Season generously with salt and pepper on all sides.
Place a large skillet over medium-high heat and add 2 tablespoons olive oil. Heat until shimmering but not smoking, about 1–2 minutes.
Add steak cubes in a single layer without overcrowding. Cook for 3–4 minutes, turning occasionally with tongs so all sides brown evenly.
Transfer the browned steak bites to a plate and tent loosely with foil to rest while you make the sauce.
Reduce heat to medium. In the same skillet, add 1/4 cup butter. When the butter melts and starts to foam, add the minced garlic. Sauté for about 30–60 seconds until fragrant.
Pour in 1/2 cup heavy cream and bring to a gentle simmer. Stir in 1/3 cup grated Parmesan cheese gradually, stirring constantly.
Return the steak bites to the skillet and toss them in the creamy Parmesan sauce until coated, about 1 minute.
Sprinkle chopped fresh parsley over the top and serve immediately while hot.
