  • 1 lb Steak (sirloin or ribeye), trimmed and cut into bite-sized cubes
  • 2 tbsp Olive oil, for searing Room temperature
  • 4 cloves Garlic, minced About 1 tbsp
  • 1/4 cup Butter Room temperature or melted for ease
  • 1/2 cup Heavy cream Cold or from the fridge
  • 1/3 cup Grated Parmesan cheese Freshly grated if possible
  • 1/2 tsp Salt Adjust to preference
  • 1/2 tsp Pepper Adjust to preference
  • 1 tbsp Fresh parsley, chopped For garnish

Instructions

  • Pat the steak cubes dry with paper towels. Season generously with salt and pepper on all sides.
  • Place a large skillet over medium-high heat and add 2 tablespoons olive oil. Heat until shimmering but not smoking, about 1–2 minutes.
  • Add steak cubes in a single layer without overcrowding. Cook for 3–4 minutes, turning occasionally with tongs so all sides brown evenly.
  • Transfer the browned steak bites to a plate and tent loosely with foil to rest while you make the sauce.
  • Reduce heat to medium. In the same skillet, add 1/4 cup butter. When the butter melts and starts to foam, add the minced garlic. Sauté for about 30–60 seconds until fragrant.
  • Pour in 1/2 cup heavy cream and bring to a gentle simmer. Stir in 1/3 cup grated Parmesan cheese gradually, stirring constantly.
  • Return the steak bites to the skillet and toss them in the creamy Parmesan sauce until coated, about 1 minute.
  • Sprinkle chopped fresh parsley over the top and serve immediately while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
