  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh lime juice
  • 2 tsp allspice (pimento)
  • 1 tsp cinnamon
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/2 tsp thyme
  • 1-2 pieces Scotch bonnet peppers, finely chopped (optional for heat) Add for extra spice.

Instructions

  • In a medium bowl, whisk together the soy sauce and apple cider vinegar.
  • Add the olive oil, brown sugar, Worcestershire sauce, and fresh lime juice. Mix well.
  • Stir in the allspice, cinnamon, black pepper, garlic powder, ground ginger, and thyme until fully combined.
  • If using, finely chop and add Scotch bonnet peppers for extra spice.
  • Taste the sauce and adjust ingredients as needed for your preferred flavor balance.
  • Use as a marinade for chicken, pork, beef, or vegetables, allowing at least one hour (or overnight for deeper flavor).
  • Grill or roast your marinated food and enjoy!

Notes

For a gluten-free option, substitute soy sauce with coconut aminos. Adjust spice level by increasing or reducing Scotch bonnet peppers.
