  • 2 large Onions Cut into thick rings, separate layers.
  • 4 pieces Jalapeños Seeded & finely chopped.
  • 8 oz Cream Cheese Softened.
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Cooked Bacon Bits
  • 1 tsp Garlic Powder
  • to taste Salt & Pepper
  • 2 pieces Eggs Beaten.
  • 1 cup Flour
  • 1 cup Seasoned Breadcrumbs
  • as needed Oil For frying.

Instructions

  • Start by cutting your onions into thick rings and separating the layers. Be sure to wear gloves when handling jalapeños to avoid any irritation!
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapeños, bacon bits, garlic powder, and a pinch of salt and pepper. Mix well until it’s creamy and cohesive.
  • Take one onion layer and fill it generously with the jalapeño filling. Place another layer on top to make a stuffed ring. Repeat with remaining rings.
  • Set up your breading stations: one for flour, one for beaten eggs, and one for seasoned breadcrumbs.
  • Dip each stuffed onion ring first in flour, then in the egg wash, and finally coat it thoroughly with breadcrumbs. Make sure each ring is well covered.
  • Heat oil in a large skillet over medium-high heat. Fry the onion rings in batches until they are golden brown and crispy, about 3-4 minutes on each side.
  • Once fried, let the onion rings drain on a paper towel to remove excess oil. Serve hot and enjoy!
