Instructions
Start by cutting your onions into thick rings and separating the layers. Be sure to wear gloves when handling jalapeños to avoid any irritation!
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapeños, bacon bits, garlic powder, and a pinch of salt and pepper. Mix well until it’s creamy and cohesive.
Take one onion layer and fill it generously with the jalapeño filling. Place another layer on top to make a stuffed ring. Repeat with remaining rings.
Set up your breading stations: one for flour, one for beaten eggs, and one for seasoned breadcrumbs.
Dip each stuffed onion ring first in flour, then in the egg wash, and finally coat it thoroughly with breadcrumbs. Make sure each ring is well covered.
Heat oil in a large skillet over medium-high heat. Fry the onion rings in batches until they are golden brown and crispy, about 3-4 minutes on each side.
Once fried, let the onion rings drain on a paper towel to remove excess oil. Serve hot and enjoy!
