Instructions
Heat olive oil in a large pot over medium heat.
Add crumbled Italian sausage and cook until browned, about 5-7 minutes.
Add chopped onion and minced garlic; cook for 3-4 minutes until softened.
Stir in diced potatoes and sliced carrots.
Pour in chicken broth, add thyme and red pepper flakes. Bring to a boil.
Reduce heat and simmer for about 20 minutes until vegetables are tender.
Add chopped spinach and heavy cream. Simmer 5 more minutes.
Season with salt and pepper to taste. Serve hot.
Notes
For a lighter version, substitute Italian sausage with ground turkey and use half-and-half instead of heavy cream. Add Parmesan cheese or fresh herbs for extra flavor.
