  • 1 lb Italian sausage, crumbled
  • 4 medium Potatoes, peeled and diced
  • 2 medium Carrots, peeled and sliced
  • 2 cups Fresh spinach, chopped
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 1 tsp Dried thyme
  • 1/2 tsp Red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add crumbled Italian sausage and cook until browned, about 5-7 minutes.
  • Add chopped onion and minced garlic; cook for 3-4 minutes until softened.
  • Stir in diced potatoes and sliced carrots.
  • Pour in chicken broth, add thyme and red pepper flakes. Bring to a boil.
  • Reduce heat and simmer for about 20 minutes until vegetables are tender.
  • Add chopped spinach and heavy cream. Simmer 5 more minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes

For a lighter version, substitute Italian sausage with ground turkey and use half-and-half instead of heavy cream. Add Parmesan cheese or fresh herbs for extra flavor.
