Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/3 cup honey
  • 1/2 cup soy sauce
  • 6 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1/4 cup water
  • 2 teaspoons cornstarch

Garnishes

  • sesame seeds for garnish
  • chopped green onions for garnish

Instructions

  • Start by mixing the honey, soy sauce, and garlic in a bowl.
  • Set the Instant Pot to ‘Sauté’ mode and heat the oil. Brown the chicken thighs on both sides, then remove and set aside.
  • Pour a little water into the pot to deglaze it, scraping up any browned bits. Add the chicken back to the pot along with the honey garlic sauce.
  • Close the lid, set the valve to ‘Sealing’, and cook on high pressure for 8 minutes. Quick release the pressure once cooking is complete.
  • Remove the chicken, set the Instant Pot to ‘Sauté’ mode, and stir in a slurry of cornstarch and water. Cook until the sauce thickens.
  • Return the chicken to the pot to coat with sauce, then serve garnished with sesame seeds and green onions.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in a microwave.
