Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts

Marinade

  • 1 cup pineapple juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Garnish

  • Fresh pineapple slices for garnish

Instructions

  • In a bowl, whisk together the pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
  • Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours. For best results, let it marinate overnight!
  • When you’re ready to cook, preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and grill for 6-7 minutes per side, or until it’s fully cooked and has beautiful grill marks.
  • In the last few minutes of grilling, place fresh pineapple slices on the grill until they’re warm and slightly charred.
  • Serve the chicken topped with the grilled pineapple slices.

Notes

Marinate the chicken overnight for the best flavor. Fresh pineapple gives the best taste, but canned works in a pinch. Serve with rice or a fresh salad for a complete meal.
