Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts

Marinade

  • 2 pieces limes (juice and zest)
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • 1 teaspoon chili flakes (optional)

Rice

  • 2 cups cooked white or brown rice

Toppings

  • 1 piece avocado, diced
  • 1 tablespoon lime juice (for avocado)
  • 2 tablespoons chopped cilantro
  • 1/4 cup diced red onion
  • to taste sour cream or Greek yogurt (optional, for topping)

Instructions

  • In a bowl, mix lime juice, zest, honey, olive oil, garlic, salt, pepper, and chili flakes. Add chicken and marinate for 15 minutes.
  • Cook chicken in a grill pan or skillet over medium-high heat, about 7–8 minutes per side, until cooked through.
  • Dice avocado and toss with lime juice. Set aside.
  • Slice chicken. In serving bowls, layer rice, chicken, avocado, cilantro, and red onion.
  • Top with sour cream or Greek yogurt if desired. Serve and enjoy!

Notes
