  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the Brussels sprouts with olive oil, honey, salt, and black pepper until evenly coated.
  • Spread the Brussels sprouts in a single layer on one side of a baking sheet.
  • On the other side of the baking sheet, spread out the bacon pieces.
  • Roast for 20-25 minutes, stirring halfway through, until the Brussels sprouts are caramelized and the bacon is crispy.
  • Meanwhile, whisk together the maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes in a small bowl.
  • Once the Brussels sprouts and bacon are done roasting, toss them with the glaze until evenly coated.
  • Serve immediately and enjoy!

Notes

For extra crunch, add chopped toasted pecans or walnuts before serving. If you like a smoky flavor, sprinkle with smoked paprika before roasting.
