Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
In a large bowl, combine honey, melted butter, and minced garlic. Whisk or stir until fully combined and slightly emulsified.
Add the peeled carrots cut into sticks into the bowl. Toss well so each carrot piece is evenly coated in the honey-garlic-butter mixture.
Season lightly with salt and pepper to taste.
Spread the coated carrots in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25–30 minutes, stirring or flipping once halfway through.
Check for doneness: carrots should be tender when pierced with a fork and have caramelized edges.
Remove from oven and transfer to a serving dish. Garnish with chopped fresh parsley for color and a fresh pop of flavor. Serve warm.
