fresh thyme leaves (or 1 teaspoon dried thyme)

Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine olive oil, honey, garlic powder, smoked paprika, salt, and black pepper. Whisk until smooth.
Add the halved baby potatoes to the bowl and toss until evenly coated.
Spread the seasoned potatoes in a single layer on the prepared baking sheet.
Scatter the chopped bacon evenly over the potatoes.
Roast in the oven for 35–40 minutes, flipping halfway through.
After 35–40 minutes, sprinkle thyme leaves and Parmesan cheese over the potatoes and return to the oven for another 5 minutes.
Remove from oven, transfer to a serving dish, and garnish with parsley. Serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. You can freeze roasted potatoes for up to 2 months.
