  • 2 tablespoons honey
  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with olive oil, honey, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  • Spread the seasoned potatoes onto a lined baking sheet in a single layer.
  • Scatter the chopped bacon evenly over the potatoes.
  • Roast for 35-40 minutes, flipping halfway through, until golden and crispy.
  • Sprinkle fresh thyme and Parmesan cheese (if using) over the potatoes and return to the oven for another 5 minutes.
  • Remove from oven, garnish with fresh parsley, and serve hot.

Notes

For extra crispiness, soak the potatoes in water before roasting. Use turkey bacon for a leaner option. Maple syrup works as a great substitute for honey.
