Instructions

  • Generously grease a large baking sheet or marble slab with butter to prevent sticking.
  • In a heavy saucepan, combine the sugar, light corn syrup, water, and salt. Stir together over medium heat until the sugar has dissolved completely.
  • Bring the mixture to a boil without further stirring. Use a candy thermometer to monitor the temperature closely.
  • Continue to cook the taffy base until it reaches 250°F (120°C)—the hard ball stage.
  • Remove the pan from heat immediately. Stir in unsalted butter, vanilla extract, and any food coloring or flavorings you desire.
  • Pour the hot taffy onto your greased baking sheet. Allow it to cool just until you can handle it safely—this usually takes about 10-15 minutes.
  • Butter your hands and begin to pull the taffy. Stretch, fold, and pull repeatedly—about 10-15 minutes—until it becomes lighter in color and firmer in texture.
  • Roll the finished taffy into long ropes. Use buttered scissors or a knife to cut into bite-sized pieces.
  • Wrap each taffy roll in wax paper to preserve freshness and prevent sticking. Store in an airtight container.
