Ingredients

Puff Pastry Dough

  • 2 cups all-purpose flour
  • 1.25 cups salted butter, cubed and chilled
  • 2/3 cup ice-cold water

Pie Crust Dough

  • 2.5 cups all-purpose flour
  • 1 cup salted butter, frozen and grated
  • 6 tablespoons cold water
  • 1/2 teaspoon sugar

Instructions

  • In a large bowl, mix flour and ice-cold water until combined. Add chilled cubed butter and mix until a dough forms.
  • Transfer dough to a floured surface and roll into a rectangle. Fold into thirds like a letter, roll out again, and repeat once more. Flatten and chill until ready to use.
  • Combine grated frozen butter with flour, sugar, and cold water in a large bowl. Stir gently until dough forms. Shape into a disc, wrap in plastic, and refrigerate before using.

Notes

You can make these doughs ahead of time and store in the fridge for up to 3 days or freeze for up to 3 months. To thaw frozen dough, place it in the fridge overnight before rolling out.
