Ingredients

Peanut Butter Filling

  • 1 cup Creamy Peanut Butter
  • 1/4 cup Unsalted Butter, melted
  • 1/4 cup Powdered Sugar
  • 1/2 teaspoon Vanilla Extract

Chocolate Coating

  • 2 cups Semi-sweet Chocolate Chips
  • 1 tablespoon Coconut Oil

Instructions

  • Step 1: Prepare the Peanut Butter Filling. In a mixing bowl, combine the peanut butter, melted butter, powdered sugar, and vanilla extract. Stir until the mixture is smooth and well-blended. Set aside.
  • Step 2: Melt the Chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  • Step 3: Assemble the Peanut Butter Cups. Line a muffin tin with paper cupcake liners. Spoon about 1 tablespoon of melted chocolate into each liner, spreading it to cover the bottom evenly. Place the muffin tin in the freezer for about 10 minutes to let the chocolate set. Once the chocolate has set, add a spoonful of the peanut butter mixture on top of each chocolate layer, spreading it evenly. Cover the peanut butter layer with another tablespoon of melted chocolate, ensuring it completely covers the peanut butter.
  • Step 4: Final Setting. Return the muffin tin to the freezer for another 20-30 minutes until the chocolate is firm. Once set, remove the peanut butter cups from the liners and store them in an airtight container.
