Ingredients

For the Oatmeal Cookies

  • ¾ cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 3 cups quick or old-fashioned oatmeal

For the Cream Filling

  • ¾ cup unsalted butter, whipped
  • 2.5 cups confectioners' sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 tbsp milk or half-and-half

Instructions

  • Mix the butter and sugars until fluffy. Add eggs and vanilla.
  • Whisk together flour, baking soda, cinnamon, and salt in a separate bowl.
  • Combine wet and dry ingredients, then stir in oatmeal.
  • Preheat oven to 375°F and line baking sheets.
  • Drop spoonfuls of dough onto sheets and bake for 10-12 minutes.
  • Beat whipped butter until light. Add sugar, vanilla, and milk for filling.
  • Sandwich cookies with cream filling.

Notes
