Homemade Mexican Pizza

Ingredients

Meat

  • 1 pound lean ground beef

Seasoning

  • 1 ounce taco seasoning 1 packet
  • 1/2 cup water

Tortillas

  • 6 medium flour tortillas

Beans

  • 1 can refried beans 16 ounces

Sauce

  • 1 can red enchilada sauce 10 ounces

Cheese

  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese

Toppings

  • 1 Roma tomato, diced
  • 1 green onion diced
  • 1 small can sliced black olives

Instructions

  • In a skillet over medium heat, add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  • Sprinkle taco seasoning over the beef, then add 1/2 cup water. Stir well, reduce the heat, and simmer for about 3 minutes, until the mixture thickens.
  • While the beef simmers, preheat your oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray. Place tortillas on the sheet in a single layer and bake for about 3-4 minutes per side to crisp them up.
  • Spread a layer of refried beans onto each tortilla. Top with seasoned ground beef. Place a second tortilla on top to make a sandwich.
  • Spoon enchilada sauce over the top tortilla, then sprinkle with cheddar and pepper-jack cheeses. Add diced tomato, green onion, and black olives evenly on top.
  • Transfer layered pizzas to a baking sheet. Bake in the oven for 8-10 minutes, or until cheese is fully melted and bubbly.
  • Let cool for a minute before slicing into wedges. Serve hot and enjoy!

Notes

For ultimate crispiness, always pre-bake your tortillas before layering. Use freshly grated cheese for better melt and flavor.
