Instructions
In a skillet over medium heat, add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
Sprinkle taco seasoning over the beef, then add 1/2 cup water. Stir well, reduce the heat, and simmer for about 3 minutes, until the mixture thickens.
While the beef simmers, preheat your oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray. Place tortillas on the sheet in a single layer and bake for about 3-4 minutes per side to crisp them up.
Spread a layer of refried beans onto each tortilla. Top with seasoned ground beef. Place a second tortilla on top to make a sandwich.
Spoon enchilada sauce over the top tortilla, then sprinkle with cheddar and pepper-jack cheeses. Add diced tomato, green onion, and black olives evenly on top.
Transfer layered pizzas to a baking sheet. Bake in the oven for 8-10 minutes, or until cheese is fully melted and bubbly.
