Instructions
In a small bowl, beat the eggs. Add the pineapple juice, sugar, vanilla extract, and melted butter. Mix well until fully combined.
In a large mixing bowl, place 3 cups of the all-purpose flour. Gradually stir in the egg mixture until everything is well incorporated.
Sprinkle in the yeast packets, one at a time, mixing thoroughly after each addition. Then, gradually add the remaining 3 cups of flour and mix. If the dough becomes too difficult to stir with a spoon, use your hands to combine the ingredients.
The dough should feel tacky but not overly sticky. If the dough feels too wet, sprinkle in extra flour, one tablespoon at a time, until it reaches the right consistency.
Cover the dough with a clean kitchen towel and place it in a warm spot to rise for 1 hour. The dough should nearly double in size.
Once risen, remove the dough from the bowl and knead it on a floured surface, incorporating the additional 1/2 cup of flour. Knead about 10-15 times, ensuring the dough is smooth and elastic.
Form the dough into either rolls or loaves. If making rolls, divide the dough into 24 portions and roll them into balls. For loaves, divide the dough in half and shape it to fit buttered loaf pans.
Let the dough rise in a warm place. If making rolls, allow it to rise for 1 hour. If making loaves, let the dough rise for about 90 minutes until doubled in size.
Preheat your oven to 350°F (175°C). Bake the rolls or loaves for 25-30 minutes or until the tops are golden brown.
Once baked, brush the tops with melted butter for extra richness. Serve warm for the best taste.
