Equipment

  • Blender or Food Processor

Ingredients

Ingredients

  • 1 cup Mayonnaise
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons Lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 clove Garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Anchovy paste (optional)
  • Salt and pepper to taste

Instructions

  • In a blender or food processor, combine mayonnaise, grated Parmesan cheese, lemon juice, Worcestershire sauce, minced garlic, Dijon mustard, and anchovy paste if using.
  • Blend until the mixture is smooth and creamy.
  • Season with salt and pepper to taste.
  • If the dressing is too thick, adjust the consistency by adding a little water or olive oil.
  • Refrigerate for at least 30 minutes before using to let the flavors come together.
  • Toss it with romaine lettuce and croutons for a classic Caesar salad, or use it as a dip for vegetables.

Notes

Use fresh garlic for the best flavor. If you don’t have anchovy paste, substitute with a little soy sauce for a different twist. Adjust the lemon juice amount for a tangier taste.
