  • 1 cup Pecans, toasted Spread in a single layer and toast until fragrant.
  • 1 cup Caramel Store-bought or homemade, warmed until pourable.
  • 12 oz Semi-sweet chocolate Melted using a double boiler or microwave.

Instructions

  • Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 5-7 minutes until golden and fragrant. Watch closely to avoid burning.
  • Melt store-bought caramel in the microwave in 20-second bursts, stirring between each, or prepare homemade caramel and keep it warm and pourable in a small saucepan.
  • Arrange toasted pecans in clusters of four on a parchment-lined baking sheet. Press nuts together gently so the caramel can hold them in place.
  • Spoon a small amount of melted caramel over each pecan cluster so it fills the gaps and slightly domes over the top. Work quickly before the caramel begins to firm.
  • Once caramel sets slightly but is still tacky (about 5 minutes at room temperature), spoon melted chocolate over the top of each cluster, fully covering the caramel and letting chocolate drip around the sides.
  • Let the turtles harden at room temperature for 20-30 minutes, or place the tray in the refrigerator for 10-15 minutes for faster setting. If desired, sprinkle a tiny pinch of flaky sea salt on top before the chocolate fully sets.
  • Once set, store in an airtight container layered between sheets of parchment paper, and enjoy!
