  • 1 lb Ground beef Regular or lean, room temperature
  • 1 small Onion Chopped (about 1 cup)
  • 3 cloves Garlic Minced
  • 1 small head Cabbage Chopped (about 6 cups)
  • 1 can (15 oz) Diced tomatoes With juice
  • 1 can (8 oz) Tomato sauce
  • 1 cup Cooked rice Cooled (white or brown)
  • Salt To taste
  • Pepper To taste
  • 1 tablespoon Oil For cooking (optional, if using lean beef)
  • Nonstick spray or butter To grease the casserole dish

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish with nonstick spray or a light coating of butter.
  • In a large skillet over medium heat, add the ground beef and cook, breaking it apart with a spatula as it browns. Cook until no pink remains, about 6–8 minutes. Drain excess fat if desired.
  • Add the chopped onion to the skillet and cook with the beef until the onion is translucent, about 3–4 minutes.
  • Stir in the minced garlic and cook for about 30 seconds to 1 minute, just until fragrant.
  • Add the chopped cabbage to the skillet and cook, stirring occasionally, until it begins to soften, about 5–7 minutes.
  • Pour in the diced tomatoes with their juice and the tomato sauce, stirring to combine.
  • Mix in the cooked rice and season with salt and pepper to taste.
  • Transfer the mixture to the prepared casserole dish, spreading it out evenly.
  • Cover the dish tightly with foil and bake for 30 minutes.
  • Remove the foil and continue baking for an additional 10–15 minutes until bubbly and slightly browned on top.
  • Let the casserole rest for 5 minutes before serving warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. This casserole freezes well.
