Hearty Beef and Barley Soup

Stew beef, cubed

Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat oil in a large pot over medium heat. Add beef, season with salt and pepper, and brown on all sides (5–7 minutes).
Remove beef and set aside.
In the same pot, sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
Stir in tomato paste and cook for another minute.
Return beef to the pot. Add beef broth, barley, and bay leaf.
Bring to a boil, then reduce to low. Cover and simmer for 45 minutes, stirring occasionally.
Taste and adjust seasoning.
Serve hot with a sprinkle of fresh parsley.

This soup pairs beautifully with crusty bread, homemade garlic bread, or a fresh green salad.
