  • 1 lb Stew beef, cubed
  • 1 cup Pearl barley
  • 6 cups Beef broth
  • 2 Carrots, diced
  • 2 stalks Celery, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Bay leaf
  • 2 tbsp Tomato paste
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat oil in a large pot over medium heat. Add beef, season with salt and pepper, and brown on all sides (5–7 minutes).
  • Remove beef and set aside.
  • In the same pot, sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
  • Stir in tomato paste and cook for another minute.
  • Return beef to the pot. Add beef broth, barley, and bay leaf.
  • Bring to a boil, then reduce to low. Cover and simmer for 45 minutes, stirring occasionally.
  • Taste and adjust seasoning.
  • Serve hot with a sprinkle of fresh parsley.

This soup pairs beautifully with crusty bread, homemade garlic bread, or a fresh green salad.
