Ingredients

Nuts and Seeds

  • 200 g peanuts, roughly chopped
  • 60 g hazelnuts, chopped
  • 30 g pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon sesame seeds

Dried Fruit

  • 30 g dried cranberries (or raisins)

Oats

  • 200 g oats

Wet Ingredients

  • 80 ml honey or maple syrup
  • 100 g butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  • Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  • In a large bowl, combine oats, chopped nuts, seeds, and dried cranberries. Stir well to evenly distribute.
  • Melt butter or coconut oil. Stir in honey or maple syrup and vanilla extract until fully combined.
  • Pour the wet mixture over the dry ingredients. Stir until all the ingredients are coated and the mixture sticks together.
  • Use your hands to form small balls of dough. Flatten slightly and place them on the tray.
  • Bake for 12–15 minutes or until golden around the edges.
  • Cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to 7 days. Freeze for up to 2 months.
