Instructions
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
In a large bowl, combine oats, chopped nuts, seeds, and dried cranberries. Stir well to evenly distribute.
Melt butter or coconut oil. Stir in honey or maple syrup and vanilla extract until fully combined.
Pour the wet mixture over the dry ingredients. Stir until all the ingredients are coated and the mixture sticks together.
Use your hands to form small balls of dough. Flatten slightly and place them on the tray.
Bake for 12–15 minutes or until golden around the edges.
Cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to 7 days. Freeze for up to 2 months.
