  • 4 pieces boneless, skinless chicken breasts
  • 1.5 cups pineapple chunks (fresh or canned, drained)
  • 1 piece red bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup BBQ sauce (your favorite kind)
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • Fresh cilantro or parsley for garnish
  • Heavy-duty aluminum foil

Instructions

  • Preheat grill to medium-high or oven to 400°F (200°C).
  • Cut 4 large sheets of foil and drizzle each with olive oil.
  • Place one chicken breast in the center of each foil sheet and season with salt and pepper.
  • Top each with pineapple chunks, red bell pepper, and red onion slices.
  • Spoon BBQ sauce over the chicken and veggies.
  • Fold the foil over and seal tightly to form a packet.
  • Grill for 20–25 minutes or bake for 25–30 minutes until chicken is fully cooked (165°F internal temperature).
  • Carefully open packets, garnish with fresh herbs, and serve hot.

Notes
