Instructions
Preheat grill to medium-high heat. Season chicken breast with salt, black pepper, and garlic powder.
Grill chicken for 5-6 minutes on each side until cooked through. Rest and slice.
Blend together 1/2 avocado, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and black pepper until creamy for the dressing.
In a bowl, layer romaine or greens, diced avocado, chopped cherry tomatoes, sliced cucumber, and grilled corn.
Top with sliced grilled chicken. Drizzle with avocado dressing and sprinkle with chili flakes if desired.
Toss gently and serve immediately.
Notes
Swap chicken for grilled shrimp, tofu, or chickpeas. Best enjoyed fresh. Store dressing separately if prepping ahead.
