Ingredients

  • 1 piece grilled chicken breast, sliced
  • 2 cups romaine or mixed greens
  • 1/2 piece avocado, diced
  • 1/2 cup cherry tomatoes, chopped
  • 1/2 cup cucumber, sliced
  • 1/2 cup grilled corn
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp chili flakes (optional)

Avocado Dressing Ingredients

  • 1/2 piece avocado
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat grill to medium-high heat. Season chicken breast with salt, black pepper, and garlic powder.
  • Grill chicken for 5-6 minutes on each side until cooked through. Rest and slice.
  • Blend together 1/2 avocado, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and black pepper until creamy for the dressing.
  • In a bowl, layer romaine or greens, diced avocado, chopped cherry tomatoes, sliced cucumber, and grilled corn.
  • Top with sliced grilled chicken. Drizzle with avocado dressing and sprinkle with chili flakes if desired.
  • Toss gently and serve immediately.

Notes

Swap chicken for grilled shrimp, tofu, or chickpeas. Best enjoyed fresh. Store dressing separately if prepping ahead.
