Good Ole Fashion Mac and Cheese

  • 3 cups dry elbow macaroni
  • 4 Tbsp salted butter
  • 2 cans evaporated milk (370 mL/12 oz each)
  • 1/3 cup milk of choice
  • 2 large eggs
  • 1/4 tsp garlic salt
  • 4 cups cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • 1 tsp paprika

Instructions

  • Bring a large pot of salted water to a boil. Add macaroni and cook until al dente. Drain and return to pot.
  • Stir in the butter until completely melted. Set aside.
  • In a large bowl, whisk together evaporated milk, regular milk, eggs, and garlic salt.
  • In a separate bowl, combine cheddar and mozzarella cheeses.
  • Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish.
  • Layer 1/3 of the macaroni in the dish, followed by 1/3 of the cheese mix. Repeat the layering process until all macaroni and cheese is used.
  • Pour the milk and egg mixture evenly over the layered macaroni and cheese.
  • Sprinkle paprika on top and bake for 25-30 minutes, or until bubbly and golden.

Notes

Use freshly shredded cheese for the best melt. You can add breadcrumbs on top for crunch. Leftovers store well and reheat beautifully.
