  • 1 cup butter or margarine, softened
  • 2 cups white sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour (reserve 1/4 cup)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh peaches, pitted and chopped

Instructions

  • Preheat oven to 325°F. Grease a 10-inch tube pan and coat it with sugar.
  • Cream butter and sugar in a large bowl until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Sift 2 3/4 cups flour with baking powder and salt. Gradually stir into the creamed mixture.
  • Toss chopped peaches with reserved 1/4 cup flour, then fold into the batter.
  • Spread batter evenly in prepared pan. Bake for 60–70 minutes or until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.

Notes

Optional: Top with homemade peach sauce by cooking pureed peaches with cornstarch until thickened. This cake also works well with nectarines or berries.
