3cupsall-purpose flour (reserve 1/4 cup)

2cupsfresh peaches, pitted and chopped
Instructions
Preheat oven to 325°F. Grease a 10-inch tube pan and coat it with sugar.
Cream butter and sugar in a large bowl until light and fluffy.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Sift 2 3/4 cups flour with baking powder and salt. Gradually stir into the creamed mixture.
Toss chopped peaches with reserved 1/4 cup flour, then fold into the batter.
Spread batter evenly in prepared pan. Bake for 60–70 minutes or until a toothpick comes out clean.
Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
Notes
Optional: Top with homemade peach sauce by cooking pureed peaches with cornstarch until thickened. This cake also works well with nectarines or berries.
