  • 1 pound baby potatoes, halved
  • 1/4 cup olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme

  • 1/2 cup grated Parmesan cheese

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together the olive oil, minced garlic, oregano, basil, thyme, salt, and pepper.
  • Add the chicken and potatoes to the bowl, tossing them thoroughly to coat with the seasoning mixture.
  • Transfer the chicken and potatoes to a large baking dish, making sure the potatoes are cut-side down.
  • Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  • Bake in the oven for 40-45 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Before serving, garnish with fresh chopped parsley for a touch of color.

Notes

For extra flavor, marinate the chicken in the olive oil and garlic mixture for a few hours before cooking. Make sure to cut your potatoes evenly so they cook at the same rate. If you like a crispy top, broil the dish for an additional 2-3 minutes at the end of baking.
