  • 1 thigh boneless skinless chicken
  • 2–3 whole carrots, peeled
  • 3/4 cup mashed potatoes (with skins)
  • 1 tbsp olive oil or butter
  • 1 tsp garlic, minced
  • 1/2 tsp Italian herbs
  • Salt and black pepper, to taste
  • fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C). Toss peeled carrots with olive oil, Italian herbs, salt, and pepper. Roast for 25–30 minutes until tender.
  • Season chicken thigh with garlic, Italian herbs, salt, and pepper. In a skillet, pan-sear chicken in butter over medium-high heat, about 4–5 minutes per side until golden and cooked through.
  • Boil potatoes until fork-tender. Drain and mash with butter, salt, and a splash of milk or cream.
  • Plate mashed potatoes, top with chicken, and arrange roasted carrots alongside. Spoon any pan drippings over the top if desired.
  • Garnish with fresh parsley and serve warm.

Notes

Switch up the herbs based on your preference! Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove or in the microwave.
