Instructions
Preheat oven to 400°F (200°C). Toss peeled carrots with olive oil, Italian herbs, salt, and pepper. Roast for 25–30 minutes until tender.
Season chicken thigh with garlic, Italian herbs, salt, and pepper. In a skillet, pan-sear chicken in butter over medium-high heat, about 4–5 minutes per side until golden and cooked through.
Boil potatoes until fork-tender. Drain and mash with butter, salt, and a splash of milk or cream.
Plate mashed potatoes, top with chicken, and arrange roasted carrots alongside. Spoon any pan drippings over the top if desired.
Garnish with fresh parsley and serve warm.
