Ingredients

Salmon Fillets

  • 4 fillets Salmon (6 oz each)

Butter

  • 2 tbsp Unsalted Butter, softened
  • 2 cloves Garlic, minced

Seasoning

  • Salt and Pepper to taste
  • 1 cup Mixed Mushrooms (button, cremini, shiitake), sliced
  • 1 cup Fresh Spinach Leaves
  • 1/2 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese

Instructions

  • In a small bowl, mix softened butter, minced garlic, salt, and pepper.
  • Season the salmon fillets with salt and pepper.
  • Heat a large skillet over medium-high heat and cook the salmon fillets for 3-4 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add 2 tbsp butter and sauté the sliced mushrooms until tender. Add minced garlic and cook for 1 minute.
  • Add fresh spinach leaves and heavy cream, stirring until spinach is wilted.
  • Stir in grated Parmesan cheese until melted and smooth. Season with additional salt and pepper if needed.
  • Return the salmon to the skillet, spooning the creamy mushroom and spinach sauce over the fillets.
  • Serve immediately and enjoy!

Notes

For extra richness, add a squeeze of lemon juice to the sauce. Substitute Parmesan with Pecorino Romano for a sharper taste. Be careful not to overcook the salmon—it should flake easily but remain moist.
