Instructions
Preheat a skillet over medium heat. Allow it to get hot but not smoking so the bread toasts evenly.
In a small bowl, mix the softened butter and minced garlic together until smooth and well combined. Taste and add a pinch of salt if desired.
Spread about 1 tablespoon of the garlic butter on one side of each slice of bread, making sure to cover the surface evenly.
Place the bread butter-side down on the hot skillet in batches if necessary. Toast each slice for 2 to 3 minutes, or until the underside is golden brown and crisp.
While the bread toasts, prepare the fillings: slice the tomato, pat the lettuce dry, and slice the grilled chicken breast into thin strips or medallions.
Assemble the sandwich by layering one piece of toasted bread (butter-side down) with 2 lettuce leaves, 2 tomato slices, and enough grilled chicken to cover. Top with another toasted bread slice, butter-side up. Repeat to make four sandwiches.
