  • 8 slices thick-cut bread Texas toast or your favorite
  • 1/2 cup unsalted butter softened to room temperature
  • 2-3 cloves garlic minced (about 1 to 1 1/2 teaspoons minced)
  • 8 large leaves lettuce romaine or iceberg, washed and dried
  • 1 large tomato sliced into 8 even slices
  • 2 large grilled chicken breasts about 1 to 1 1/4 pounds total, cooked and sliced thinly

Instructions

  • Preheat a skillet over medium heat. Allow it to get hot but not smoking so the bread toasts evenly.
  • In a small bowl, mix the softened butter and minced garlic together until smooth and well combined. Taste and add a pinch of salt if desired.
  • Spread about 1 tablespoon of the garlic butter on one side of each slice of bread, making sure to cover the surface evenly.
  • Place the bread butter-side down on the hot skillet in batches if necessary. Toast each slice for 2 to 3 minutes, or until the underside is golden brown and crisp.
  • While the bread toasts, prepare the fillings: slice the tomato, pat the lettuce dry, and slice the grilled chicken breast into thin strips or medallions.
  • Assemble the sandwich by layering one piece of toasted bread (butter-side down) with 2 lettuce leaves, 2 tomato slices, and enough grilled chicken to cover. Top with another toasted bread slice, butter-side up. Repeat to make four sandwiches.
  • Serve warm and enjoy immediately while the bread is crisp and the chicken is hot.

Notes

Use room-temperature butter for easy mixing. For deeper garlic flavor, let the garlic butter sit for 10 minutes before spreading.
