Ingredients

Chicken

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces

Seasoning

  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Butter and Garlic

  • 2 tablespoons butter
  • 2 cloves garlic minced

Pasta

  • 8 oz pasta fettuccine, penne, or pasta of your choice

Creamy Sauce

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese freshly grated preferred
  • 1/2 teaspoon Italian seasoning

Garnish

  • to taste fresh parsley chopped

Instructions

  • Season the chicken pieces with salt, pepper, garlic powder, and paprika. Toss evenly so every bite gets coated in flavor.
  • Heat one tablespoon of butter in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-6 minutes, stirring occasionally, until golden and cooked through. Transfer the chicken to a plate and set aside.
  • In the same skillet, add the remaining butter and minced garlic (2 cloves). Sauté for 30 seconds until fragrant, scraping up any browned bits left from the chicken.
  • While the chicken cooks, prepare your pasta according to package instructions. Reserve 1/2 cup of the pasta cooking water, then drain.
  • Add the cooked pasta to the skillet with garlic butter. Pour in heavy cream, grated Parmesan cheese, and Italian seasoning. Stir gently to combine.
  • Let the sauce simmer for 2-3 minutes over low heat, adding a splash of the reserved pasta water if it’s too thick. The sauce should be silky and cling to the noodles.
  • Return the chicken bites to the skillet and toss everything together. Allow the chicken to warm for another 1-2 minutes.
  • Serve hot, garnished with chopped fresh parsley and additional Parmesan if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. For reheating, add a splash of milk or cream to loosen the sauce and reheat gently over low heat on the stove, stirring often.
