Instructions
Prepare the Potatoes: Start by placing the peeled potatoes in a pot filled with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.
Sauté the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the beef bites, season with salt and pepper, and cook for about 3-4 minutes until browned. Remove the beef and set it aside.
Make the Garlic Butter Sauce: In the same skillet, reduce heat to medium and add the unsalted butter. Once melted, add the minced garlic, cooking for an additional minute until fragrant.
Combine Beef and Sauce: Return the beef to the skillet with the garlic butter, stirring to coat the pieces. Cook for another 2-3 minutes, allowing the flavors to meld together.
Prepare the Mashed Potatoes: Once the potatoes are cooked, drain them and return them to the pot. Add milk and 2 tablespoons of butter. Mash until creamy and season with salt to taste.
Serve: Plate a generous scoop of mashed potatoes, topped with those succulent beef bites. Garnish with chives if using, and dig in!
