Start by adding the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract to a medium mixing bowl. Stir until the mixture is completely smooth and well combined.
Gently fold in the mini chocolate chips, distributing them evenly throughout the mixture.
Line a baking sheet or tray with parchment paper or a silicone mat for easy removal.
Use a small spoon or cookie scoop to drop bite-sized mounds of the yogurt mixture onto the prepared tray. Aim for about a tablespoon per bite.
Optionally, sprinkle a few extra chocolate chips on top of each mound for even more chocolatey goodness.
Place the tray in the freezer for at least 1-2 hours, or until the bites are solid and easy to pick up.
Once frozen, transfer the bites to an airtight container or freezer bag for longer storage.
Notes
Store any extra bites in an airtight container in the freezer for up to 2 months. They are best eaten directly from the freezer.
