  • 4 large green tomatoes
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs
  • 2 teaspoons coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 quart vegetable oil (for frying)

Instructions

  • Slice the tomatoes into 1/2-inch thick slices. Discard the ends.
  • In a bowl, whisk together the eggs and milk.
  • Place the flour on a plate.
  • On another plate, combine cornmeal, bread crumbs, salt, and pepper.
  • Coat each tomato slice in flour, then dip in egg mixture, then dredge in the breadcrumb-cornmeal mixture.
  • Heat 1/2 inch of vegetable oil in a skillet over medium heat.
  • Fry tomatoes in batches, 4–5 at a time, without overcrowding.
  • Cook until golden brown on one side, flip, and fry until golden on the other side.
  • Remove and drain on paper towels. Serve hot.

Notes

Serve with remoulade or ranch. For extra spice, add paprika or cayenne to the breadcrumb mix. Best enjoyed immediately.
