Instructions
Slice the tomatoes into 1/2-inch thick slices. Discard the ends.
In a bowl, whisk together the eggs and milk.
Place the flour on a plate.
On another plate, combine cornmeal, bread crumbs, salt, and pepper.
Coat each tomato slice in flour, then dip in egg mixture, then dredge in the breadcrumb-cornmeal mixture.
Heat 1/2 inch of vegetable oil in a skillet over medium heat.
Fry tomatoes in batches, 4–5 at a time, without overcrowding.
Cook until golden brown on one side, flip, and fry until golden on the other side.
Remove and drain on paper towels. Serve hot.
Notes
Serve with remoulade or ranch. For extra spice, add paprika or cayenne to the breadcrumb mix. Best enjoyed immediately.
