  • 2 tablespoons unsalted butter
  • 1 large onion, thinly sliced
  • 3 cups beef or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Grated Gruyère cheese, for topping (optional)

Instructions

  • In a medium saucepan, melt the butter over medium heat until bubbling.
  • Add sliced onions and cook for 15–20 minutes, stirring often, until caramelized and golden.
  • Stir in the rice and cook for 2–3 minutes to toast lightly and absorb flavors.
  • Pour in the broth, thyme, garlic powder, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and liquid absorbed.
  • Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
  • Garnish with parsley and top with Gruyère cheese if desired. Serve warm.

Notes

To reheat, add a splash of broth or water and warm gently. This dish freezes well for up to 1 month. Swap Gruyère with cheddar or mozzarella if needed.
