Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleanup.
Lay the tortillas flat on a clean work surface. Evenly distribute a slice of provolone cheese, a generous portion of roast beef, and a handful of French fried onions over each tortilla.
Roll the tortillas up tightly, finishing with the seam side down. Use a little olive oil brushed along the edge to help seal them closed.
Place roll ups seam side down on your prepared baking sheet. Brush the tops with any remaining olive oil to help them turn golden and crispy.
Bake for about 10 minutes, or until the tortillas are lightly browned and the cheese inside is bubbly.
While the roll ups are baking, prepare the au jus: In a small saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Whisk to combine and simmer over medium heat until warmed through.
Once roll ups are ready, cut them in halves or thirds for easy dipping. Serve with warm au jus alongside for the ultimate French dip experience.
Notes
For the crispiest coats, brush olive oil on both the edges and tops of your rolled tortillas. Feel free to swap provolone for Swiss or mozzarella if preferred.
