Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 2 large eggs
  • 1/4 cup butter, melted
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well-combined.
  • In another bowl, beat the eggs and then stir in the milk, melted butter, lemon juice, and vanilla extract until blended.
  • Create a well in the center of the dry ingredients, pour the wet mixture in, and gently stir until just combined. (Do not over-mix; a few lumps are okay!)
  • Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a pat of butter.
  • Pour about 1/4 cup of batter onto the skillet. Cook for 2-3 minutes, until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.
  • Serve warm with your favorite toppings and enjoy every fluffy bite!

Notes

For a healthier twist, try using whole wheat flour or a non-dairy milk alternative.
