  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup marshmallow fluff plus more for swirling
  • 1/2 cup peanut butter chips optional
  • 1/2 cup mini marshmallows optional

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the egg, vanilla extract, and peanut butter, and mix until well combined.
  • Sift in the flour, baking powder, and salt. Stir the mixture until just combined, being careful not to overmix. If using peanut butter chips, fold them into the batter at this stage.
  • Spread about two-thirds of the batter evenly into the prepared baking pan. Drop spoonfuls of marshmallow fluff over the batter and use a knife or skewer to gently swirl it into the batter. If you’re using mini marshmallows, sprinkle them on top.
  • Drop spoonfuls of the remaining batter over the marshmallow layer. Gently spread it out to cover the fluff and marshmallows as much as possible.
  • Bake in the preheated oven for 25-30 minutes, or until the bars are set and lightly golden on top. A toothpick inserted into the center should come out with a few moist crumbs.
  • Allow the bars to cool completely in the pan before cutting them into squares. Serve them as a sweet treat with a glass of cold milk or a cup of coffee.

Notes

To keep the bars chewy and gooey, make sure not to overbake them. They should be slightly underdone in the center when you take them out of the oven. For the smoothest texture, use creamy peanut butter rather than chunky. However, if you like a bit of crunch, feel free to use chunky peanut butter. For even more gooeyness, add extra marshmallow fluff on top of the batter before baking.
