Instructions
Start by heating a tablespoon of cooking oil in a large non-stick pan over medium heat. Add the sliced longganisa and cook, stirring occasionally, until browned and slightly crispy—about 6 to 8 minutes. Remove the longganisa and set aside.
In the same pan, add more oil if needed. Crack the eggs, one at a time, and cook to your preferred doneness. For sunny-side-up eggs, let them cook undisturbed until the whites are set but the yolks remain runny. Season with a pinch of salt and pepper. Set the eggs aside.
