Chicken Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Avocado Salsa Ingredients

  • 1 piece avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime, juiced
  • Salt and pepper to taste

Instructions

  • In a bowl, combine lime juice, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 15 minutes (up to 2 hours for deeper flavor).
  • Heat your grill or grill pan over medium-high heat. Grill the chicken for about 6–7 minutes per side or until cooked through and juices run clear. Let rest before slicing.
  • In a mixing bowl, combine diced avocado, halved cherry tomatoes, red onion, chopped cilantro, and lime juice. Season with salt and pepper to taste.
  • Slice the grilled chicken and top with a generous spoonful of avocado salsa. Serve immediately and enjoy!

Notes

Use fresh lime juice for the best flavor. You can add jalapeños for heat or other ingredients to the salsa for variations.
