Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts cut into bite-sized pieces

Seasoning

  • 1 packet fajita seasoning mix 1 oz

Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 piece red bell pepper thinly sliced
  • 1 piece green bell pepper thinly sliced
  • 1 piece yellow bell pepper thinly sliced
  • 1 medium onion thinly sliced

Instructions

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a large pan, heat olive oil over medium heat. Add the bite-sized chicken pieces and sprinkle the fajita seasoning mix over them. Cook until the chicken is browned and cooked through (roughly 5–7 minutes).
  • Step 3: Toss in the sliced bell peppers and onions into the pan. Sauté for another 5 minutes until the veggies are tender but still crisp.
  • Step 4: Transfer the chicken and veggie mixture to a greased casserole dish, spreading evenly.
  • Step 5: Place in the preheated oven and bake for about 20–25 minutes or until everything is heated through and the flavors have melded nicely together.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the casserole before baking it.
