These Easy Pecan Pie Bars combine everything we adore about traditional pecan pie—gooey, nutty filling and buttery crust—into handheld squares perfect for sharing.
Preheat your oven to 350°F (175°C). Lightly grease or line a 9x13-inch baking pan with parchment paper, leaving an overhang for easier removal.
Make the crust: In a large mixing bowl, blend the flour, powdered sugar, and 1/4 teaspoon salt. Add the diced cold butter and cut it in using a pastry cutter or your fingers until the mixture forms coarse crumbs.
Press this mixture evenly into the bottom of your prepared pan. Press firmly to create a uniform layer, then bake for 18-20 minutes until the edges are lightly golden.
While the crust bakes, prepare the filling. In a medium saucepan over medium heat, combine the brown sugar, honey, and 12 tablespoons of butter. Stir until the mixture comes to a gentle boil—about 2-3 minutes.
Remove from heat and whisk in the heavy cream, 1/4 teaspoon salt, and vanilla extract. Fold in the chopped pecans until well coated.
When the crust is ready, pour the pecan filling evenly over the hot crust. Spread to cover completely.
Return the pan to the oven and bake for an additional 28-32 minutes, or until the filling is bubbling and set.
Remove from the oven and cool completely in the pan. For best results (and cleaner slices), chill in the fridge for at least one hour before lifting out and cutting into bars.
