Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.75 cups granulated sugar

Wet Ingredients

  • 1 cup unsweetened almond milk or your preferred plant-based milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 cup boiling water

Frosting Ingredients

  • 0.5 cup vegan butter softened
  • 2.5 cups powdered sugar
  • 0.5 cup unsweetened cocoa powder for frosting
  • 1 teaspoon vanilla extract for frosting
  • 2-4 tablespoons plant-based milk for frosting

Instructions

  • 1️⃣ Prepare the Cake Batter: Preheat Oven: Set your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and sugar.
  • Combine Wet Ingredients: Add almond milk, vegetable oil, vanilla extract, and apple cider vinegar to the dry ingredients. Stir gently until just combined.
  • Incorporate Boiling Water: Gradually pour in the boiling water while stirring. The batter will be thin—this is normal!
  • 2️⃣ Bake the Cake: Pour Batter: Divide the batter evenly between the prepared cake pans.
  • Bake: Place in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • 3️⃣ Make the Vegan Chocolate Frosting: Cream the Butter: In a large bowl, beat the vegan butter until creamy and smooth.
  • Add Sugar and Cocoa: Sift in the powdered sugar and cocoa powder.
  • Add Vanilla and Milk: Stir in the vanilla extract and 2 tablespoons of plant-based milk. Beat until smooth, adding more milk if needed for a spreadable consistency.
  • 4️⃣ Assemble the Cake: Layer One: Place one cake layer on a serving plate or cake stand. Spread a generous layer of frosting on top.
  • Layer Two: Add the second cake layer on top and frost the entire cake, including the sides.
  • Decorate: Add sprinkles, fresh fruit, or shaved chocolate for a festive touch, if desired.

Notes

Make sure all your ingredients are at room temperature before starting. If you don’t have vegan butter, you can use coconut oil instead. For extra flavor, add a pinch of coffee to enhance the chocolate taste.
