  • 3/4 cup Unsweetened cocoa powder

  • 1 teaspoon Baking powder

  • 1 cup Buttermilk
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Granulated sugar
  • 1 cup Unsalted butter, softened For frosting
  • 3 1/2 cups Powdered sugar For frosting
  • 3/4 cup Unsweetened cocoa powder For frosting
  • 1/2 cup Heavy cream For frosting
  • 2 teaspoons Vanilla extract For frosting
  • 1 pinch Salt For frosting
  • Chocolate shavings (for garnish)
  • Banana slices (for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  • In a large bowl, beat eggs, sugar, buttermilk, oil, and vanilla extract until smooth.
  • Stir in mashed bananas until combined.
  • Gradually mix in the dry ingredients, stirring until just combined. Do not overmix.
  • Divide the batter between the two pans and bake for 30–35 minutes, or until a toothpick comes out clean.
  • Cool in pans for 15 minutes, then transfer to wire racks to cool completely.
  • To make frosting: Beat butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well.
  • Add heavy cream, vanilla, and a pinch of salt. Beat until fluffy and smooth.
  • Assemble by layering cake and frosting, then frost the top and sides. Garnish with chocolate shavings and banana slices.
  • Chill for 30 minutes before slicing and serving.

Notes

To make homemade buttermilk: combine 1 cup milk with 1 tbsp vinegar or lemon juice and let sit for 5 minutes. Store leftovers covered in the fridge for up to 5 days, or freeze slices for up to 3 months. Great with nuts, berries, or even espresso powder added to the frosting!
