  • 1 pound lean ground beef (85-90%)
  • 3 large russet potatoes, sliced 1/4-inch thick
  • 2 large sweet onions, sliced 1/4-inch thick
  • 1 can diced tomatoes (preferably fire-roasted)
  • 2 medium green bell peppers, diced
  • Salt and pepper, to taste
  • 1 tablespoon diced butter (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1 teaspoon crushed red pepper (optional)
  • pepperoncini (optional)

Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a skillet, cook ground beef until browned. Season with salt, pepper, garlic powder, and crushed red pepper if desired.
  • Layer the potatoes at the bottom of the baking dish, season with salt and pepper, and dot with butter if using.
  • Add the cooked ground beef, followed by sliced onions, diced tomatoes, and bell peppers.
  • Cover with foil and bake for 2 hours until the casserole is tender.
  • Let cool slightly before serving and enjoy!

Notes

For a lighter option, substitute ground beef with ground turkey. To save time, pre-cook potatoes in the microwave for a few minutes before baking.
