Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Wet Ingredients

  • 1/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter

Fritters

  • 1 cup fresh peaches, peeled and diced
  • Oil for frying

Optional Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk or peach juice
  • 1/2 tsp vanilla extract

Instructions

  • In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • In another bowl, whisk milk, egg, vanilla extract, and melted butter.
  • Pour wet mixture into dry mixture and stir until just combined.
  • Gently fold in diced peaches.
  • Heat oil in a deep pan or fryer to 350°F (175°C).
  • Drop spoonfuls of batter into hot oil. Fry 2–3 minutes per side until golden brown.
  • Remove fritters and drain on paper towels.
  • Optional: Mix powdered sugar, milk (or peach juice), and vanilla to make glaze. Drizzle over warm fritters.

Notes

Use ripe, juicy peaches for best results. You can substitute other fruits such as apples or plums. Avoid overcrowding the fryer, and always monitor oil temperature for even frying.
