Instructions
In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
In another bowl, whisk milk, egg, vanilla extract, and melted butter.
Pour wet mixture into dry mixture and stir until just combined.
Gently fold in diced peaches.
Heat oil in a deep pan or fryer to 350°F (175°C).
Drop spoonfuls of batter into hot oil. Fry 2–3 minutes per side until golden brown.
Remove fritters and drain on paper towels.
Optional: Mix powdered sugar, milk (or peach juice), and vanilla to make glaze. Drizzle over warm fritters.
